We are fortunate in this country (United States) to have an abundance of food available. This is both a blessing and a curse. TV ads bombarded people daily about food products. You can walk down the street in any community and find an endless number of restaurants to go. We acquire unwanted weight easily.

This weight control journal allows us to balance food abundance with weight control. We keep a weight control journal to track the amount of calories we eat each day. We do not deny ourselves any foods to eat; we just attempt to control the amount. We are tracking this information as a research piece. It is meant to be an historical document.

Health experts may tell you not to weigh yourself every day, but we do so because it works for us. We use the Tanita scale to weight ourselves every day. It is made by Tanita Corporation of Tokyo, Japan. You program the electronic scale with your height, age, and level of activity. You may see your weight in pounds or kilograms. It also gives you the percentage of fat and how many calories you may eat to maintain your current weight. We like this scale because it gives you the reading to the nearest tenth of a pound. This particular model allows you to program four people. You may choose a model that will fulfill your household needs.

The electronic scale the "Good Cook" is what we use to weigh our food. You can get the weight of the food in pounds. It will read it out in 1/8 ounce increments. In addition, the scale allows you to switch to get a reading of the food weight in 2 gram increments.

Blue cheese was discovered by accident. The caves that early cheeses were aged in were favorable to the development of a variety of molds even though the temperature and moisture were controlled. Roquefort was invented in 1070 AD; Gorgonzola was created around 879 AD; Stilton, in the 18th century.

Eating blue cheese is an acquired taste. Many people do not like this cheese because of the aroma and the blue-gray or blue-green mold in the cheese. It is the mold that gives it its smell. Our waiter on our last cruise, who was from Jamaica, was very adamant about his dislike for blue cheese. Cow's milk, sheep's milk, or goat's milk may be used to produce the blue cheese along with the Penicillium cultures added to the curd. This is what makes the blue cheese so distinctive. Some blue cheeses are injected with spores before the curds form, while some cheese makers mix spores in with the curds after they form. These cheeses are usually aged in a room such as a cave were the temperature is controlled.

To be called Roquefort, Gorgonzola, and Stilton in the European Union, many blue cheeses like wine are protected. They can be called by certain a name such as Gorgonzola if they come from that region and are made a certain way.



Most Blue cheeses are made from whole cow's milk, but they can also be made with ewe's or goat's milk. This cheese has a sharp taste and tends to be salty. The smell has been described as pungent. Blue cheeses can be eaten by themselves or can be crumbled or melted over foods.

These are some ways to enjoy blue cheese: alone at room temperature or served with fruit, crackers and wine. It has a flavor which may be nutty to sour or tangy.

You can use blue cheese:

* As a dressing served with Buffalo Wings.
* Crumbled into salad.
* As a dressing served with raw vegetables, specifically carrots, broccoli, cauliflower, etc.
* Crumbled (and/or melted) onto grilled beef steaks, specifically New York and Kansas City Strips.
* On hamburgers, especially covered with cajun seasoning to form the "Black and Blue" burger.
* Crumbled (and/or melted) onto grilled or roasted lamb, or melted into a sauce with juices from cooked lamb.
* It can be used to flavor a risotto or a polenta. Mixed with other famous Italian cheeses it forms the condiment for pasta quattro formaggi.

We have always liked blue cheese in all its varieties such as Stilton, Gorgonzola, Danablu, and Roquefort. What we bring home from the market depends on what is available. Stilton is great with chocolate and Port wine. Gorgonzola was on our menu today. Enjoy good foods in moderation and stay healthy.

We have noticed that the cost of food has been consistently rising. The cost per item is an average of $4.00. If you count the number of items in your grocery basket and multiply by 4 you will be very close to the final bill you will pay.

We do take vitamins, but will not list them for they may not be appropriate for all individuals wishing to start their own weight control journal. To loose weight, the ideal calorie count is 850 calories per day for our weight and height as well as our activity level. This has been determined from previous years of experience. All calorie counts and weights are approximate.

It's important to drink enough water each day. We drink a minimum of eight, 8 ounce glasses of water per day to keep our body healthy. In addition, salt is not used in our cooking process, with the except of rice and pasta. This helps to keep our blood pressure down as well as reducing the retention of water in our body.
