We keep a weight control journal to track the amount of calories we ingest each day. Daily, people are bombarded with TV ads about food products. You can walk in any community and find an endless number of restaurants to go. Unwanted weight is easy to acquire. We are fortunate in this country to have an abundance of food available. This is both a blessing and a curse. This weight journal allows us to balance food abundance with weight control. We deny ourselves nothing to eat; we just attempt to control the amount. We are tracking this information as a research piece. It is meant to be an historical document.

Black beans or Frijoles Negros are part of the family of beans that include pinto beans, navy beans and kidney beans. They are known as "common beans" because these beans come from a common bean that originated in Peru; they were spread by migrating Indian tribes throughout South and Central America. The Spanish explorers brought the beans with them when returning to Europe. From Europe, they spread to Africa and Asia through Portuguese and Spanish traders.

Beans are an inexpensive protein. In Mexico, Brazil, Cuba, Dominican Republic, and Guatemala, black beans or frijoles negros are an important part of their diets. The United States, Brazil, India, China, and Indonesia produce the most dried beans or "common beans."

Black beans or Frijoles Negros are available year round and can be bought dried or in cans. They may be called turtle beans because of their shiny dark color and their shell. Some people have said their flavor is like mushrooms. Black beans or Frijoles Negros have great texture, but hold their shape when cooked.

Black beans or Frijoles Negros are a legume and are an excellent source of fiber that will lower cholesterol and contain significant amounts of foliate and magnesium. They have many health benefits such as preventing blood sugar levels from rising rapidly after eating. It is a good choice for people with diabetes or hypoglycemia. Black beans or Frijoles Negros give you energy while your body is stabilizing your blood sugar. Using black beans or Frijoles Negros with a whole grain product(brown rice), will give you a nearly fat-free protein.

Black Beans or Frijoles Negros are loaded with antioxidants "Research published in the Journal of Agriculture and Food Chemistry indicates that black beans or Frijoles Negros are as rich in antioxidant compounds called anthocyanins as grapes and cranberries, fruits long considered antioxidant superstars." They may help protect against cancer; and they may lower your risk of heart attacks.

We use both dried and canned black beans in our cooking. Today we used Goya Black Beans or Frijoles Negros in the 15.5 ounce can. A 1/2 cup (122 grams) serving is 90 calories. Total fat is 0.5 grams, zero saturated fats and zero trans fat. Cholesterol is 0 mg, sodium is 460 mg, total carbohydrates 19 grams, dietary fiber is 6 grams, sugar is less than 1 gram, and protein is 7 grams. The can contains 3.5 servings. We do take vitamins, but will not list them for they may not be appropriate for all individuals wishing to start their own weight control journal. To loose weight, the ideal calorie count is 850 calories per day for our weight and height as well as our activity level. This has been determined from previous years of experience. All calorie counts and weights are approximate.

It's important to drink enough water each day. We drink a minimum of eight, 8 ounce glasses of water per day to keep our body healthy. In addition, salt is not used in our cooking process, with the except of rice and pasta. This helps to keep our blood pressure down as well as reducing the retention of water in our body.
