The Wines Of Time Just as a river or stream changes with time, people change with time. When it comes to wine most, forget that wines are a living entity as much alive as you. Wines like all living things are evolving by the minute. The wine yesterday may be better, it may be worse depending on the care and attention provided to encourage the wine a life of longevity. The taste you taste today will not be the same tomorrow, next month, next year or even eighty years if the wine should live so long. Part of the evolving taste of wine will be your own evolving wine experience. A wine that you tasted when you first start experimenting with a particular varietal may surprise you a week later or even a year later. The wine has changed. You have changed. Last week you tasted a wine and it was so so. Today you tasted the same wine, same varietal, same producer, same everything except the wine is in a different bottle and you are in a different frame of mind. Wine is a subjective to the taster. You may like it I may say OK a little thin. Wine is like people, your not going to like all people and some people are not going to like you. First rule in wine and people - go with what you like. If you like a particular wine, odds are that your friends will like it. They may like it more than or less than you, but they enjoy the wine because the wine represents a part of you. When selecting a wine to take to a party and you do not know the people other than your host/hostess, always--say again, always--bring the wine you enjoy. You maybe the only one that likes this wine. If you find some one that also likes the wine, well you have a great ice break to start a friendly conversation. Wine has brought more friends and lovers together than all the match makers in hell.
