Wine, Beer and Spirits Part 4 Making Wine from Grapes - When to Pick The making of wine from grapes can be as simple as a farmer crushing a bunch of grapes to technological, environment controlled machinery, and sophisticated PhD degreed technician winemakers processing the grapes. The system is the same. Pick the grapes. Crush the grapes. Separate the juice from the grapes. Clarify the juice. Ferment the juice from the grapes into wine. Age the wine. Blend the wine (this is not done to all wines). Bottle the wine. And most important, drink the wine. There have been thousands upon thousands of books, articles and papers defining, clarifying, and explaining these same processes. It is so simple anyone can make wine in their home. If left alone even grapes will make wine by its self. The reason for the sophisticated technology is to achieve the highest quality of wine which winemakers hope will bring the highest value in price and enjoyment. Many things can go wrong from the picking to the drinking and a wine farmer, producer wants to insure nothing is left to chance. Of course nature can destroy the quality at any time and man multiplies the opportunity to ruin the wine at every stage in the process. Wine is a living agro-product. Wine that is dead is undrinkable. To achieve the highest quality wine, the winemaker must determine when to pick the grapes. When to pick can be determined by tasting for the sugar content in the grape or the vineyard manager may use an instrument called a refractometer. The refractometer measures the amount of sugar, acid and potential alcohol if the grapes are picked at the moment of the refractometer test. The determination when to pick will depend on the grape varietal and the type of wine to be produced from a particular vineyard of grapes. This is the decision of the vineyard manager and the winemaker. If they get it wrong, bad wine. If they get it right the wine may be praised, discussed and enjoyed for decades to come. It's like picking someone to marry. The decision once made will be important forever. Just know that bad wine, good wine, and great wine all begin with the decision - when to pick. I have stood in some of the greatest vineyards of the world a week to two weeks before the decision to pick the grapes and watched the vineyard manger and winemaker discuss and fret like expectant parents over their babies, the grapes. When to deliver is that important.
